Harvesting & Mindful Hand-Picking
Our olives are carefully hand-picked at peak maturity using traditional, eco-friendly methods to preserve their full nutritional value and rich flavor profile. To ensure uncompromised quality, bruised or ground-fallen olives are strictly excluded, leaving only the healthiest, farm-fresh fruit for production. Once harvested, the olives are placed in ventilated crates to prevent fermentation and oxidation, then immediately transported to our milling facility on the very same day.
Cold Press Extraction
Upon arrival, the olives are gently defoliated, washed in pristine water, and prepared for extraction. Throughout the crushing and malaxation stages, the olive paste temperature is strictly maintained below 27°C (80.6°F). This unheated, purely mechanical process protects the delicate polyphenols, natural antioxidants, vitamin E, and complex fruity aromas inherent to the highest grade extra virgin olive oil.
Hygienic Bottling & Secure Shipping
After extraction, the fresh oil rests in temperature-controlled stainless steel tanks that seal out air and light. It is then bottled untouched in dark glass bottles and tin containers engineered to preserve shelf life and freshness. Every order is packed using specialized, impact-resistant materials designed to buffer against heat fluctuations and shipping shocks, ensuring product integrity straight from our grove to your kitchen.
